Award Winning
French Fusion Cuisine
Frederick Costa, the Owner of Frederick's Restaurant was raised in an
environment of wonderful food and hospitality. Growing up in both in
Indochina and France, his parents, Henri and Odette owned highly acclaimed
gourmet restaurants in both countries. As a young man he not only
learned the secrets of French and Asian cuisine's, but also the true
meaning of hospitality and customer service. Customers of
Frederick's will say that visiting the restaurant is like walking into
your best friend's home. You feel completely welcomed and special on
every visit.
After working
in the family restaurants for many years, Frederick sought formal training
at the Flo Brasserie in Paris. From there he came to the United
States and to San Antonio in 1984. In 1985 he opened the very
popular L'Etoile restaurant. After several years with L'Etoile,
Frederick sought to blend the flavors and diverse cultures of the lands he
grew up in. His parents operated both French and Indochinese
restaurants and the fusion of both cuisines intrigued him. In 2000,
he opened Frederick's. The result has been a dining experience that
has become legendary for area residents and visitors.
Chef Perrin was born and raised in Switzerland. Early on he found he had a passion for
cooking, so at age 19 attended culinary school in Neuchatel, Switzerland. In his early years Chef Perrin traveled through Europe working in some of
the finest restaurants gaining valuable experience. Wanting to come to
America, Chef Perrin did so in the late 1970's going to Washington and
working at Rive Gauche, Tiberio and Jean Pierre.
It was in Washington where
Chef Perrin then found a friend in Frederick Costa. The two came to San
Antonio together to open L'Etoile. Chef Perrin continues to delight and satisfy with his
classic approach to elegant cuisine embracing the best of two fine worlds,
Asian and French.
